The Fullerton Cake Boutique
Along with the Great Treasures Pen Cai and Gold Rush Yu Sheng, well-loved signatures like the Yam Paste Nian Gao Tarts and Rose-scented Water Chestnut Cake make their return. Making its debut this year is the Lion Dance Eight Treasures Cookies, specially crafted by Jade's Chinese Executive Chef Leong Chee Yeng to commemorate the return of the full-fledge lion dance this year.
Executive Pastry Chef Siddharth Prabhu presents the Fortune Treasure Bowl. Robed in red with a sprinkling of edible gold dust, the radiant dessert combines traditional ingredients, rounded off with the warm toffee-like notes of Gula Melaka.
Send your greetings to cherished associates with The Fullerton Bak Kwa, available in a new truffle flavour, and the Abundance Hamper, filled with goodies for sharing.

Auspicious Beginnings

Toss to prosperity with the Premium Gold Rush Yu Sheng (S$688, minimum 3-day advance order), arranged into an endearing image of a white rabbit, or the Gold Rush Yu Sheng (from S$78), presented alongside a hand-drawn rabbit motif and a Chinese calligraphy greeting, written using five-spice powder—a signature finishing touch by Chef Leong.
Both versions are served with a choice of Norwegian smoked salmon or plant-based salmon at Jade, and are also available upon request at Town Restaurant and The Courtyard.

A Symbolic Feast at Jade

Gather your loved ones for a bountiful set menu starring Chinese Executive Chef Leong’s inspired creations, such as the Deep-fried ‘Honeycomb’ Hokkaido Scallop with Spiced Salted Egg Yolk, and the Trio of Live Red Grouper, concluding sweetly with the luxurious Hot Cream of Almond with Bird’s Nest, served with adorable Rabbit-shaped Sesame and Peanut Muah Chee.

Lunar New Year Afternoon Tea
21 to 24 January 2023
Crafted for leisurely reunions, Lunar New Year-themed Afternoon Tea will be served at The Courtyard in The Fullerton Hotel Singapore and The Landing Point in The Fullerton Bay Hotel Singapore.
Staying true to the ritual, each set will be served with freshly baked scones, clotted cream and jam in addition to the selection of loose leaf TWG teas and coffees from Bacha Coffee. For a touch of celebratory sparkle, guests can sip on a complimentary glass of champagne or sparkling tea at The Landing Point.

Sumptuous Celebrations

Dine to your heart's content with the free-flowing Lunar New Year Dinner Feast, served at Town Restaurant daily. On the eve and first three days of Lunar New Year, diners can also ‘lohei’ with smoked salmon Yu Sheng served to each table.
Throughout the season, Town Restaurant’s Sunday Brunch and Lunch Buffet menus will also be elevated with celebratory dishes, such as spicy chilli crab with golden mantou, and wok-fried black pepper slipper lobster
For a less conventional celebration, La Brasserie will present traditional ingredients with a French twist in its 4-course Set Dinner, beginning with Hokkaido scallop carpaccio topped with caviar, grapefruit and herb essential oil. On the eve, diners at La Brasserie can enjoy a head start on reunion feasting with the Lunar New Year Brunch.

Treat your loved ones to an unforgettable evening with The Clifford Pier's elegant 6-course Reunion Dinner. The communal-style feast begins auspiciously with Norwegian smoked salmon Yu Sheng and Hokkaido scallop confit.
On 22 and 23 January, The Clifford Pier’s International Afternoon Tea Buffet takes festive indulgence to a new height with free-flowing Chinese-style barbecued meats, hand-pulled la mian in nutritious broth, Peranakan dishes, enticing desserts, and more.

Lion and Dragon Dance Performances
