Savour Singapore – A Heritage of Singapore Cuisine

The Fullerton Ocean Park Hotel Hong Kong is delighted to partner with The Fullerton Hotel Singapore for an exclusive cross‑hotel culinary collaboration. Between 12 and 26 June 2026, we welcome Chef Chan Yiaw Chee, Senior Sous Chef of The Fullerton Hotel Singapore, to present Savour Singapore – A Heritage of Singapore Cuisine, where the most beloved tastes of Singapore are authentically brought to life in Hong Kong.


With over 25 years of professional culinary experience, Chef Chan Yiaw Chee is widely respected for his dedication to preserving the authenticity of Singaporean cuisine. Deeply inspired by Singapore’s rich multicultural heritage—spanning Chinese, Malay, Indian, and Peranakan influences—he masterfully combines time‑honoured recipes with refined professional techniques, creating dishes that are bold in flavour, beautifully balanced, and rooted in authenticity.


This special menu showcases a selection of Chef Chan’s signature creations. Highlights include the refreshing Classic Singapore Fruit Rojak, aromatic Traditional ‘Mamak’ Kambing Soup, and the much‑loved Wok‑Fried Hokkien Mee. Taking centre stage are rotating Singaporean icons, including Singapore Chilli Crab with Golden Mantou and Black Pepper Mud Crab, offering guests an indulgent taste of the city’s most celebrated seafood dishes. 

The menu is further complemented by comforting home‑style classics such as Ayam Rendang, Imperial Dòu Jiàng‑Braised Pork Belly, and the delicately stewed Peranakan Nyonya Chap Chye, each reflecting Chef Chan’s respect for tradition and meticulous attention to detail.
