Inspired by the strength and grace of the Horse, this year's repertoire honours nostalgic classics with exceptional ingredients, elegant details, and flavours that are at times refined and delicate, and at other times bold and spirited — just like the Horse — evoking beauty and gastronomic delight at each turn.
Begin with the ‘mane’ attraction — the Premium Edition ‘Winning Horse’ Yu Sheng. Demonstrating Chef Leong’s refined sensibilities for artistic presentation, it captures the visage of a horse in motion, composed with precision. The Gold Rush Yu Sheng makes a strong impression as well, presented beside a hand-drawn galloping horse and a Chinese calligraphy greeting — a signature flourish by Chef Leong.

Reunion Dinner at The Courtyard
On Lunar New Year’s Eve, Jade guests may choose to dine at The Courtyard, nestled within the grand atrium of The Fullerton Hotel Singapore. Beneath its soaring ceilings and illuminated by Chinese garden-themed décor, the evening unfolds with a single seating, allowing families to savour every course at a leisurely pace.

On Sundays, the Lunar Delights Sunday Brunch offers an expanded spread and brunch classics elevated with celebratory flair.
At the Reunion Dinner Buffet, each family will be served a Whole Crispy Fried Barramundi with tamarind soy glaze and passion fruit sauce. On the eve and first three days of Chinese New Year, dinner includes a Yu Sheng Platter served to your table.
