Celebrate the Mid-Autumn Festival at Jade restaurant with an exquisite menu artfully prepared by Chinese Executive Chef Leong Chee Yeng.
The six-course menu draws inspiration from the traditions of Mid-Autumn, such as moon viewing or 赏月 in Mandarin. Imbued with symbolic meaning, look out for special references to the festival — from the poetic dish names in Mandarin, to the artistic presentation of each dish.
“While most people associate Mid-Autumn with mooncakes, we wanted to elevate the occasion with more culinary creations inspired by the rich traditions of Mid-Autumn,” says Chef Leong.
Starring premium ingredients used in traditional Chinese cuisine, the culinary journey begins with the Trio of Moonlight: sautéed sliced duck in Chinese wine and soy sauce, chilled fresh abalone scented with fragrant rose wine and deep-fried crab cake with pumpkin purée for a crunchy contrast. Next, enjoy a nourishing double-boiled chicken soup with a delicate layer of housemade beancurd mixed with finely minced chicken. Rich with soothing flavours, it bears a slice of carefully carved winter melon stuffed with dried scallop. According to Chef Leong, the dish depicts a reflection of the moon on a lake.
For mains, savour the fresh lightness of sliced grouper accented with the fragrance of roasted garlic, braised with yam and beancurd. A second main comprises steamed egg white with prawn, scented with 20-year vintage Chinese Hua Diao Wine. This is followed by fragrant wok-fried rice, studded with honey-glazed pork char siew and spiked with preserved olives and fish roe for extra umami.
Round off the meal with a sweet constellation: refreshing pineapple and coconut ice cream dotted with osmanthus jelly; an endearing rabbit-shaped egg white cake that melts in the mouth; and a selection of baked and snow skin mooncakes from this year’s Jade Signatures Mooncake Collection.
