Embark on an epicurean journey presented by Chef de Cuisine Mitchell Yeo, designed as a reverie of idyllic moments and a sincere interpretation of timeless French flavours.

Begin with the tender Angus Beef Tartare, brightened with Kaluga caviar and Espelette pepper. A choice of exquisite creations follows — either the indulgent Foie Gras on brioche, or Chef Mitchell’s interpretation of the classic French seafood soup, Bouillabaisse.

For the main act, enjoy gourmet pleasures from land or sea — the grass-fed Lumina Lamb served with creamy leek soubise, black garlic, and shallots, finished with a splash of sherry, or the velvety Toothfish, complemented with anchovy carrot velouté, sakura ebi, and Cajun.

A sweet finish comes courtesy of the iconic Apple Tarte Tatin. Reminiscent of autumn, this rendition is composed of gently caramelised golden apple atop a delicate disc of puff pastry, beautifully crowned with rich pecan gelato.
