Evocative of the inspiring beauty and natural splendour of aki — the Japanese term for autumn — this afternoon tea experience offers a curated ensemble composed in Chef Makoto’s distinctive style, melding European and Japanese nuances while showcasing premium ingredients from land and sea.
A Celebration of Nature’s Distinct Flavours
Begin with an aromatic greeting: the Sansho Miso Yaki Nasu Madeleine, topped with smoky grilled eggplant and shaved parmesan. Other savoury creations include the luxurious AMI Signature Caviar Choux, filled with Japanese-style egg mayonnaise and crowned with glistening Nomad caviar.
A Teatime Staple, Reimagined with a Fullerton-Exclusive Creation
In place of traditional scones, Chef Makoto presents a Japanese-inspired bread course, crafted exclusively for this collaboration: the Kinako & Matcha Tropézienne with Yuzu Jam. Cloud-like dollops of cream sandwiched between fluffy brioche offer a lighter experience while preserving the pleasure of this teatime staple.
Sweet Traditions, Revisited
Belonging to the third generation of a family of pâtissiers whose business traces back to 1935, Chef Makoto carries forward a heritage steeped in pastry craftsmanship. His grandfather specialised in wagashi – traditional Japanese confections – and his father evolved the family trade to serve yogashi, or Western-style pastries.
Chef Makoto’s ingrained appreciation for traditional sweets is evident in delicate treats that honour the classics, from Mont Blanc to Black Forest. The dessert medley concludes with the refreshing Mango Coconut Rice Pudding with Mango and Passion Fruit Sauce, made with Japanese rice for a unique consistency.
Accompanying each set is The Courtyard’s specially crafted Yuzu Blossom mocktail, combining cherry blossom tea, yuzu, and butterfly pea flower tea, made from butterfly pea flowers freshly harvested from The Fullerton Farm.
Takeaway Treats for Sharing
Two of Chef Makoto’s best-selling pastry creations will also be available for takeaway from The Fullerton Cake Boutique, adjacent to The Courtyard — the Caramel Passion Banana Mousse Cake and the Apple Tatin Tarte, perfect for gifting or enjoying with loved ones.
