Discover the artistic creations of Chinese Executive Chef Leong Chee Yeng at 'The Art of Jade'. Held at The Fullerton Hotel Singapore's East Garden Gallery, this month-long exhibition features a collection of over 50 ceramic pieces and oil paintings by Chef Leong. A portion of the proceeds from the artwork sales will be donated to the Autism Resource Centre (Singapore).

a heartfelt culinary tribute
In tandem with the exhibition, Chef Leong invites guests on a gourmet journey inspired by the rich heritage of The Fullerton Building and its surrounding landmarks. Drawing from the expression ‘陶回古早味’, which refers to capturing classic flavours, the Nostalgic Reflections Set Menu also alludes to the art of ceramic-making, as ‘陶’ represents pottery in Chinese.
"Both cuisine and ceramic art convey heartfelt stories shaped by the hands that craft them. With this menu, I seek to weave together the essence of The Fullerton Building and its surroundings. Dishes like Heritage in Stone 石情石美, a braised pumpkin soup with fresh crab meat and sea cucumber, is served in a stone pot — a nod to the ‘Singapore Stone’, an ancient sandstone relic found near present-day The Fullerton Hotel Singapore.”

About the chef / artist
Chef Leong Chee Yeng joined Jade in 2007 following an extensive and acclaimed career in Chinese gastronomy in Singapore and the region. For Chef Leong, the process of shaping raw clay and transforming fresh ingredients are interconnected forms of expression. He sees fire as the uniting element in both his kitchen and studio — the same flame that fires his wok also fires the kiln for his ceramics. Both crafts require skilled hands, precision, and a sensitivity to transform inspired thought into something that will delight the senses, whether through a beautifully plated dish with exquisite flavours or a handcrafted ceramic piece.
