Gather your mates and settle in for a proper feast of Modern Australian fare with our guest chef from The Fullerton Hotel Sydney. Executive Sous Chef Jun Lee brings his specialities at our signature buffet, bringing pristine seafood, premium cuts, and native Australian ingredients to the table.

Highlights include Blue Swimmer Crab Fettuccine tossed to order at a live station, and succulent roasts such as the 8-Hour Slow-Roasted Lamb Shoulder, prepared with an aromatic blend of lemon myrtle and macadamia. 

At the hot dish section, seafood and poultry dishes embody both provenance and flavour. The Grilled Barramundi with Finger Lime Butter is served with a luxurious butter sauce and caviar-like finger lime, while the Crispy-Skin Snapper with Miso Glaze reflecting Chef Jun’s expertise in Japanese cuisine.

Conclude your feast on a distinctly Australian note, with a dessert trio thoughtfully curated by Chef Jun Lee and his team: Wattleseed Pavlova, Wild Honey Apricot Macadamia Tart, and Classic Chocolate & Cherry Lamington.

- About Chef Jun Lee -



“Food, to me, is not simply sustenance. It is a language that bridges culture, memory, and people.” - Chef Jun Lee

Chef Jun Lee’s culinary journey began at the age of 19 in a Japanese restaurant in Korea. “Growing up around my family’s restaurant business, I learned early on how much a single meal could hold stories, relationships, and memories. That foundation has never left me,” shared Chef Jun. 

It was through Kaiseki that he discovered his culinary philosophy. More than a technique, Kaiseki taught him to listen — to the season, the ingredient, and the person seated at the table. This philosophy has guided every kitchen he has led, from luxury Japanese dining establishments to five-star hotels across Australia.

Driven by simple curiosity and a desire to experience a world beyond his own, Chef Jun found himself drawn to Australia in 2008. Its vast landscapes, relaxed way of life, and extraordinary cultural diversity deeply resonated with him, and he eventually chose to call it home.
