For a limited time, La Brasserie invites you on a journey to Holbrook, New South Wales, where the rolling pastures of Kinross Station yield lamb of exceptional calibre. Graded MB2-4 and naturally well-marbled, this free-range, Hampshire Down lamb, is nurtured on a 70-day diet of barley, lupins, and hay, resulting in a supple texture and rich flavour often likened to Wagyu.
  
  
Crafted with French finesse and fresh seasonal produce, each dish on this menu showcases the lamb’s refined character and delicate marbling. The Shortloin arrives lightly seared, its richness lifted by tart blackberries, toasted Piedmont hazelnuts, and fresh sage. Equally compelling is the Rack, roasted in its own rendered tallow and served with sweet Nashi pear, smoked aubergine purée, and roasted parsnip — a balanced harmony of smoky, earthy, and gently sweet notes.
